Apple Buttermilk Muffins Serves 12 2 medium apples 2 cups all purpose flour 1/2 cup packed light brown sugar 2 tsp baking powder 1 tsp baking soda 1/2 tsp salt 1 cup buttermilk 1/4 cup vegetable oil 2 tsp vanilla extract 1 large egg 1/2 cup walnuts, chopped (optional) 1 Tbsp granulated sugar 1 tsp ground cinnamon Preheat oven to 400 F Grease twelve 2 1/2" by 1 3/4" muffin pan cups. Peel, core, and dice apples (you should have about 2 cups). In large bowl, mix flour, brown sugar, baking powder, baking soda, and salt. In small bowl, with wire whisk or fork, mix buttermilk, oil, vanilla, and eggs until blended. Stir buttermilk mixture into flour mixture just until moistened (mixture will be lumpy). Fold in apples, and walnuts, if using. Spoon batter into muffin pan cups. In cup, mix granulated sugar and cinnamon, sprinkle over muffins. Bake 25 minutes, or until toothpick inserted in center comes out clean. Immediately remove muffins from pan. Serve warm, or cool on wire rack, reheat if desired. Printable version: apple06.txt.
