Recipe Archives->Cajun->Pig Ears
Pigs Ears 1 egg 1/3 cup butter 1.25 cups flour 1 teaspoon baking powder salt 1 cup maple syrup 1/2 cup chop pecans Blend egg and butter. Stir flour with baking powder and salt. Beat egg mixture into flour mixture until smooth. Divide mixture into 18 small balls. Roll each on a floured surface until it is paper thin. Cover with a wet towel so that dough doesn't dry out. Heat oil in pan to 375 degrees. Drop dough into oil and as soon as it starts to surface, give a slight twist with the tines of a fork. Pastry should have the look of a pig's ear. Fry for about 1.5 minutes until brown. Drizzle with syrup and sprinkle with pecans. Printable version: pig-ears.txt.
