Praline Chicken
Yield:  6 servings 

1 Tbsp Creole seasoning
6 skinned and boneless chicken breast halves
1/4 cup butter, melted
1 Tbsp. vegetable oil
1/3 cup maple syrup
2 Tbsp brown sugar
1 cup chopped pecans, toasted

Sprinkle Creole seasoning on both sides of the chicken.  Cook
chicken in butter and oil in a large skillet over medium heat 4 to
5 minutes on each side or until done.  Remove chicken, reserving
drippings in skillet.  Place chicken on a serving platter; set
aside and keep warm.  Add maple syrup and sugar to drippings in
skillet; bring to a boil.  Stir in pecans and cook 1 minute or
until thoroughly heated.  Spoon pecan mixture over chicken.  Chicken 
mixture can be served over rice.  Makes 6 servings
