Eggplant in Coconut Cream
(St. Maarten)

Peel and thinly slice 1 large eggplant.  Arrange in buttered oven
proof dish.  Cover with 3 large onions, finely chopped.  Sprinkle
with 1 teaspoon dried hot red chili pepper, salt and ground pepper
to taste.  Pour over 2 cups coconut cream.  Cover dish and bake at
350F for 45 minutes.  Uncover and bake 10 minutes longer.  Serves
4 to 6.
