Stuffed Christophene 3 large christophenes 2 tablespoons oil 1 large onion, finely chopped 1 clove garlic, chopped 1 pound ground beef 1 tablespoon curry powder or 1 hot red or green pepper, chopped 3 medium tomatoes, peeled and chopped salt freshly ground pepper Butter Grated cheese Boil the whole christophenes in salted water until tender, about 30 minutes. Cut in halves lengthwise. Scoop out pulp and mash. Reserve shells. Heat the oil in a skillet and fry the onion, garlic, and ground meat for 15 minutes, stirring occasionally. Add the curry powder or pepper and fry for a few minutes longer. Add the tomatoes and the mashed christophene pulp. Cook, stirring, until the ingredients are well blended and the mixture is fairly dry. Season well with salt and pepper, pack into shells, dot with butter, sprinkle with grated cheese and bake in a 350 oven for 15 minutes. Serves 6. Printable version: stuffed-christophene.txt.
