Kiwifruit Cheesecake 350g package cookies (crumbled) (Use plain cookies or graham crackers) 150g (approx 5/8 cup) butter 2 tsp cinnamon 6 kiwifruit 1/2 cup water 1 packet lime Jello 1/2 cup hot water 2 Tbsp lemon juice 250g (approx 8.8 oz) cream cheese 1 cup caster sugar (Very fine baker's sugar) 1 tsp vanilla 1 tin evaporated skim milk (well chilled) Melt butter, pour over crumbs and cinnamon. Mix well and press into one large tin (14") or 2 smaller ones. Chill. Peel and slice kiwifruit and simmer with 1/2 cup water for 5 min. Strain and make the juice up to one cup with the hot water. Dissolve Jello in this, add lemon juice and cool. Mash cream cheese, sugar, and vanilla, and beat until smooth. Beat evaporated milk until thick- add to cream cheese mix and then beat in Jello and fruit. Leave 1 hour, then pour into crust. Chill 1-2 hours or overnight. Decorate with kiwifruit pieces, and enjoy. Note: You can buy a premade graham cracker crust and cut out the first three ingredients. Start the recipe by peeling the kiwifruit.
