Tart Lime Cheesecake 1 1/2 cups chocolate graham cracker crumbs 1 cup sugar 1/4 cup margarine, melted 16 ounces cream cheese, softened 1 cup sour cream 3 large eggs 3 limes, peel 1/4 cup lime juice 2 tablespoons all-purpose flour 1 cup sour cream 1 tablespoon sugar 2 teaspoons lime juice Mix crumbs, 2 tablespoons from the cup of sugar, and melted margarine. Press over bottom and 1/2 inch up sides of a 9-inch springform pan. Bake in a 350 oven until lightly browned, about 10 minutes. Beat cheese, 1 cup sour cream, eggs, remainder of one cup sugar, peel, 1/4 cup juice, and flour until smooth. Pour into crust. Bake in 350 oven until center jiggles only slightly when pan is gently shaken, 35 to 45 minutes. Cool. Mix remaining 1 cup sour cream, tablespoon sugar, and 2 teaspoons lime juice and spread on top of cheesecake. Cover and chill until cold, at least 4 hours or up to next day.
