New York Style Cheesecake 1 3/4 cup graham cracker crumbs 1 stick butter or margarine 15 to 16 oz ricotta cheese 1 lb. cream cheese 1 1/2 cups sugar 3 Tablespoons cornstarch 3 Tablespoons flour 4 eggs Melt the butter, pour over crumbs, and mix. Press mixture onto bottom and sides of a 9" springform pan. Put in refrigerator until ready to use. Combine ricotta, cream cheese, sugar, cornstarch, flour and eggs and beat at high speed for 10 minutes. Then add vanilla, lemon juice and sour cream. 1 tsp. vanilla 1/2 tsp. lemon juice 1 pint sour cream Beat at low speed until well mixed. Pour into springform pan. Bake at 325 for 1 hour. Turn off oven, but leave cheesecake in oven for at least 2 hours to cool. Printable version: new-york-style03.txt.
