My son was dying , he is getting a little better and I have not been on line much since January.

I use you preserves section, dry mixes and cookie bars sections very often.

I went to make my pumpkin pickles and butter and preserves . So I went to your site and they are no longer there. Could you please tell me if these 3 sections are on the cd rom? If so are they there in their entirety. Thank you so much . I loved your site as it was.

I've used your site for years, and it was the absolute best, bar none. Sometimes I would browse recipes only to marvel at the range of expertise required from one to the next - there was something for everyone here, whether you wanted to start from scratch with fresh ingredients, or just open some cans and stir a few times. It was obviously a labor of love for you, and I'm sorry to see it succumb to economics.

I visited the site often enough that I'd be willing to pay an annual fee to use it. I hope more people feel the same way so that this killer resource can get back to its former self. Good luck!

Just a thought to improve your service. I didn't recognise your name on the outside of the envelope and the disk inside was unlabelled. It would be helpful if you either wrote "Wonderful Recipes" with a felt pen on the CD or else printed some labels (more expensive).

Dear Stephanie,
Be careful about the cost to you of burning fresh CDs for $20. That is a bit low when you consider your own time and effort. Back around 1980, businesses had priced the cost of producing a personal letter response at about $30 each, when you include the executive effort to write the letter, the secretary's time to type it and then make a duplicate for the file as well as address the envelope and postage. It is probably much more now, but I think it is a comparable example of overhead costs for producing those CDs on the fly. Check how much time you need to do this and budget your time at a reasonable professional business rate, $30 up to $400 an hour depending on your personal expertise. Don't forget your overhead in terms of cost of the supplies to produce the CDs and power. From what I've seen most budgeting of this sort does not include capital costs for equipment, but that never made any sense to me. Thus include that as you see fit. I would amortize the equipment costs over the expected sales, and apportion time according to how much of the time is used to produce the CDs as opposed to your personal use of the equipment.
 
I'm amazed how many people have no idea how to charge for their work. I watched many businesses around here fail because the charged what they thought was a fair rate rather than what it actually cost them. I have a friend who has a fishing tackle shop that has never broken even in 20 years. Fortunately, this is a retirement business as he made fortune as a fishing captain and can afford to lose money on this fishing tackle shop. He runs the shop to keep in touch with all the friends and people he meet when he was a fishing boat captain. Then again, he still works too hard and under prices his merchandise and services.

WARM OYSTERS WITH MARMALADE OF ONIONS
AND WHITE WINE (CHARDONNAY)

For 12 oysters :
- Mix

* 1 yolk
* 4 fluid ounces of liquid cream
* 1 table spoon of marmalade of onion
* 3 fluid ounces of white wine Chardonnay
* 1 pinch of minced parsley
* 1 pinch of pepper

- Open the oysters, remove the water.
- Cover it with the mixing.
- Place it in a hot oven, thermostat 10.
- Let it cook for 15 minutes.
- I give you a trick : Lay the oysters on little (home made) beds of aluminium paper in order to settle them.

SQUIDS STUFFED
WITH THE MARMALADE OF ONION - LEMON

For 6 persons
- Ingredients :

* 12 squids.
* 3 table spoons of marmalade of onion, with lemon or original.
* 3.1/2 ounces of stale bread.
* 2 small tomatoes.
* 1 cluster of parsley, salt, pepper, and thyme.
* 2 yolks, 1 glass of milk.
* 1 glass of dry white wine.
* 1 table spoon a olive oil.

- Let the bread soak in the milk.
- Add the marmalade of onion.
- Add the tomatoes grossly cut.
- Add 2/3 of the mixed parsley, salt, season with pepper.
- Fill the squids and keep them shut with a tooth-pick.
- Heat the olive oil in a frying pan.
- Fry quickly the squids on a hot flame, then slow down, add the white wine, the thyme, and cover.
- Cook for 15 minutes. Add the third part of the mixed parsley. Let it cook for another 3 minutes, but keep stirring.

Serve as a "hot entrée" with a tomatoe sauce, or as a Main menu - with rice. WELL DONE !!!

Recipes with Confit d'oignon

INTERNET DELIGHTS SOME

RECIPES

WARM OYSTERS WITH MARMALADE OF ONIONS
AND WHITE WINE (CHARDONNAY)

For 12 oysters :
- Mix

* 1 yolk
* 4 fluid ounces of liquid cream
* 1 table spoon of marmalade of onion
* 3 fluid ounces of white wine Chardonnay
* 1 pinch of minced parsley
* 1 pinch of pepper

- Open the oysters, remove the water.
- Cover it with the mixing.
- Place it in a hot oven, thermostat 10.
- Let it cook for 15 minutes.
- I give you a trick : Lay the oysters on little (home made) beds of aluminium paper in order to settle them.

SQUIDS STUFFED
WITH THE MARMALADE OF ONION - LEMON

For 6 persons
- Ingredients :

* 12 squids.
* 3 table spoons of marmalade of onion, with lemon or original.
* 3.1/2 ounces of stale bread.
* 2 small tomatoes.
* 1 cluster of parsley, salt, pepper, and thyme.
* 2 yolks, 1 glass of milk.
* 1 glass of dry white wine.
* 1 table spoon a olive oil.

- Let the bread soak in the milk.
- Add the marmalade of onion.
- Add the tomatoes grossly cut.
- Add 2/3 of the mixed parsley, salt, season with pepper.
- Fill the squids and keep them shut with a tooth-pick.
- Heat the olive oil in a frying pan.
- Fry quickly the squids on a hot flame, then slow down, add the white wine, the thyme, and cover.
- Cook for 15 minutes. Add the third part of the mixed parsley. Let it cook for another 3 minutes, but keep stirring.

Serve as a "hot entrée" with a tomatoe sauce, or as a Main menu - with rice. WELL DONE !!!
