Seafood Crepes Acapulco 1/2 c shredded Monterey Jack Cheese 1/2 c ricotta or cottage cheese 8 oz imitation crab 3 scallions, sliced 1/4 c canned diced green chilies 8 corn tortillas 3 T flour 3 T margarine 1 c milk 1/2 c chicken broth salt, pepper and cayenne, to taste Mix first five ingredients. Heat tortillas to soften. Fill tortillas with crab filling and roll up. Place seam-side down in greased 9x11 pan. Spoon sauce over and bake 25-30 minutes at 350. Melt margarine. Whisk in flour. Stir in remaining ingredients. Cook until thickened, stirring constantly. Printable version: seafood-crepes.txt.
