Shrimp Salsa 1 lb. shrimp, cooked 1/2 cup chopped red onion 1/2 cup chopped cilantro 2 tomatoes, seeded, juiced and chopped 2 Tbsp olive oil 2 limes 2 avocados, diced 3 Tbsp Serrano and/or jalapeno peppers, chopped finely Salt & pepper to taste Pour oil over shrimp. Add salt, pepper and lime juice. Stir to coat. Add remaining ingredients and refrigerate for at least one hour. Serve with tortilla chips, on a bed of lettuce or rolled in flour tortillas. Hints: Add peppers to taste to adjust spiciness Variation: Add red or yellow bell peppers, or sliced scallions
