AVOCADO SOUP Yield: 6 servings 4 medium avocados 1 cup plain low-fat yogurt 4 cups chicken stock or broth, cold, fat removed Juice of 1 lime 1 teaspoon finely chopped fresh mint Red pepper sauce, to taste Salt, white pepper, to taste Avocado slices, fried tortilla strips for garnish Cut the avocados in half and remove the pits. Roughly chop the flesh. Transfer to the bowl of a food processor. Add the remaining ingredients, except avocado slices and fried tortilla strips. Process until smooth. Adjust the seasoning. Serve garnished with avocado slices and tortilla strips. Printable version: avocado02.txt.
