Bacon Corn Soup 1 lb. bacon cubed 2 cups tomato juice 3 cups hot water 2 cups white rice 1 large white onion, chopped 2 cups frozen corn In a large sauce pan saute bacon and onion until bacon is crisp. Keeping all bacon fat in pan add hot water and tomato juice. Bring to a simmer and add the rice. When rice is cooked add the corn and simmer for about 10 minutes or until corn is cooked.
