Esqueixada (Italian/Spanish Salt cod salad) (Catalonian) Mix visually equal amounts of the following: Salt cod (bacalao), soaked in cold water overnight, skin & bones removed, drained and shredded onion in thin slivers green bell pepper in thin slivers potatoes cut in small irregular wedges, boiled in salted water with a little vinegar Add 1 or 2 cloves fresh garlic crushed and finely minced. Dress with good olive oil and vinegar and salt and pepper to taste. Garnish with sliced hard boiled egg and black olives. Serve at room temperature. Printable version: codfish-salad01.txt.
