Almond Celery Serves: 4 to 6 2 cups/ 500 ml celery, sliced diagonally in 1/8" slices (.3 cm) salt and pepper 2 tbsp/ 30 ml butter 1/2 tbsp/ 10 ml chopped chives 1/2 tbsp/ 10 ml chopped onion 1 tbsp/ 15 ml flour 1/4 cup/ 50 ml cream 1/2 cup/ 125 ml chicken broth 1/3 cup/ 75 ml toasted almonds In a medium pan, sprinkle celery with salt and pepper. Add butter, cover and cook over low heat until tender, stirring a couple of times (about 15 minutes). Uncover pan, sprinkle with chives, onion and flour, mix well and cook a few minutes stirring. Add cream and broth. Cook stirring constantly until heated through and thickened. Add almonds and serve. Printable version: almond-celery.txt.
